Beef short rib is the cut that does the work for you. Sussex beef from the Surrey Hills, grass fed and native breed, and very hard to overcook once it is in the oven with a lid on.
Each rib is around 1kg, enough for two generously or three with plenty of mash. The rack they come off is what butchers call Jacob's ladder.
Give it three hours minimum at a low heat, braised in stock or wine or whatever you have open. It is ready when the meat gives against a spoon and not before. This is a cut that rewards patience rather than skill, which is why it turns up on so many restaurant menus.
It will take a barbecue, but low and slow with the lid down, not straight over the coals.
If you want the same idea for less, our shin of beef does a similar job at about a third of the price.

- If we can't deliver ourselves, we use DPD's next-day service.
Delivery lead time and days
We need two working days to prepare your order. Then, delivery will be made on the next Wednesday, Thursday or Friday.
Your order confirmation email will contain a planned delivery date. If you need to re-arrange delivery you can reply and let us know.
