Shin of beef is the cut that made stew worth eating. It comes from the leg, so it has worked hard its whole life, and it is full of the connective tissue that melts down into something rich and glossy given three or four hours.
Ours is native breed, from farms in West Sussex and just outside Guildford. It comes as one thick boneless slice of around 500g, near enough a small joint. Braise it whole rather than dicing it first: less cut surface, less moisture lost, and after three hours it pulls apart with a fork anyway.
Enough for two or three in a stew, a ragu or a pie, and better the next day than it was on the night.
It costs less by weight than our short rib or our beef cheek, and if you have only ever made stew with diced braising steak, this is the upgrade.

We deliver across the county of Surrey, and throughout the UK.
- Delivery costs £5 on all orders.
- Whenever possible we make local deliveries ourselves.
- If we can't deliver ourselves, we use DPD's next-day service.
Delivery lead time and days
We need two working days to prepare your order. Then, delivery will be made on the next Wednesday, Thursday or Friday.
Your order confirmation email will contain a planned delivery date. If you need to re-arrange delivery you can reply and let us know.

A brilliant butchers
A brilliant butchers – Nathan and the team are great. Really fresh produce, with good selection and excellent cuts for the amateur chefs. A lot of the beef and lamb is all grass fed which is a bonus and all sourced locally. I live just down the road and this is my go to butchers for everything from BBQ to a Sunday roast.
