Beef cheek, or ox cheek, is the hardest working muscle on the animal, which is exactly why it is worth cooking. All that work means collagen, and collagen is what turns silky after three or four hours in a low oven. You cannot rush it, and you do not need to be a good cook to get it right.

Ours are native breed, from farms in West Sussex and just outside Guildford.

Each cheek is around 400g, boneless and trimmed, so none of it goes in the bin. One will feed two over mash, or make a ragu that goes further than you would expect.

Braise it in red wine or stout. An ox cheek is done when it collapses under a spoon, and not a minute before.

Delivery lead time and days

We need two working days to prepare your order. Then, delivery will be made on the next Wednesday, Thursday or Friday.

Your order confirmation email will contain a planned delivery date. If you need to re-arrange delivery you can reply and let us know.

Collection information

You can collect your online order from one of our three locations. Just select the collection option at checkout.
