With the World Cup in the Americas this summer, we knew we had to create a recipe for the occasion. And so here's our take on "Tex Mex" food: Slow Cooked Fajita Beef.
If you wanted to serve it on chips with cheese over the top, it would almost count as Canadian Beef Poutine!
This is a perfect World Cup Final recipe in the sense that once it's in the oven, it's totally hands off with time to focus on the game. If you put it in the oven 2 hours before kick off, it'll be ready for half time. You're welcome.
This recipe serves 4 people.
Total cooking time: 3.5 hours in the oven
What you need
500 g beef chuck steak
250g chopped tomatoes
250g peppers, sliced
250g onions, sliced
4 cloves smoked garlic
Olive oil
Juice of 1 lime
1 tbsp cumin
1 tbsp garlic powder
1 tbsp chilli powder
2 tsp smoked paprika
How it is done
- Add the chuck steak to the centre of a large ovenproof dish or casserole dish.
- Add the tomatoes, peppers, onions and smoked garlic around the beef.
- Drizzle over the olive oil, squeeze over the lime juice, then add all of the seasonings and coat everything well.
- Cover with a lid or foil and cook at 160°C fan for 3 to 3.5 hours, or until the beef is tender and pulls apart easily.
- Remove the beef, shred with two forks, then mix it back through the vegetables and cooking juices.
- Divide into 4 equal portions and serve.
Notes
Serve in a wrap with all the usual bits you like: salsa, guacamole, sour cream, shredded chese. Or, for a poutine-style sharing dish, pile onto chips with melted cheese.
