One of my favourite recipes Lemon Garlic Chicken

Ingredients:

  • 2 boneless, skinless chicken breasts (about 200g each)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh herbs (e.g., thyme, rosemary, oregano)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup dry white wine (for deglazing pan)

Method:

  1. Preheat oven to 200°C.
  2. In a shallow dish, whisk together olive oil, lemon juice, herbs, garlic powder, salt, and pepper. Add chicken breasts and coat evenly.
  3. Heat a large oven-safe skillet over medium heat. Add chicken breasts and sear for 2-3 minutes per side, until golden brown.
  4. Optional: Pour white wine into the pan and scrape up any browned bits (deglazing). Let the wine simmer for 1 minute.
  5. Transfer the skillet with chicken to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 74°C.
  6. Let the chicken rest for 5 minutes before serving.

Tips:

  • You can substitute other herbs like parsley, basil, or tarragon based on your taste.
  • For added flavour, marinate the chicken in the mixture for 30 minutes before cooking.
  • If using thicker chicken breasts, adjust the baking time accordingly.
  • Serve with roasted vegetables, rice, mashed potatoes, or your favourite side dish.
