Spiced roast beef with red wine gravy
Ingredients:
2 tbsp mixed peppercorn
2 tbsp mustard seed
2 tsp fennel seed
1 ½kg fillet of beef
2 tbsp olive oil
3 red onions, thickly sliced with skins
a few thyme leaves, to serve (optional)
For the gravy
2 tbsp olive oil
1½-2 tbsp cornflour
2 beef stock cubes
3-4 tbsp redcurrant jelly
400ml red wine
Method:
Take the beef fillet and roll it into crushed peppercorns and mustard.
Cover and put in the fridge for 48 hours.
Approximately 2 hours before cooking, take the beef out from the refrigerator so that it attains room temperature.
Heat the oven at 200 or 180 degrees.
Pour the oil into a pan and heat it.
Brown the beef in the pan and season with some salt.
Now in a roasting tin, spread onions at the bottom and place the beef on it.
Roast it for desired time- 20 minutes for rare, 25 minutes for medium, and 35 minutes for nicely done beef.
Rest the roasted beef on a platter for about 20-30 minutes.
Stir the onions, roasting juices, oil, cornflour, and crumbled stock cubes on medium flame.
Add in the jelly and the wine occasionally.
Add some water, if required.
Leave it to simmer for 10-15 minutes.
Add seasoning and put the prepared gravy in a clean dish, discarding the onions.
Put the flavoured beef. Slice it and serve with gravy and thyme seasoning.
Braised Corned Beef Brisket
Ingredients:
1 flat-cut corned beef brisket
1 tbsp browning sauce
1 tbsp vegetable oil
1 onion, cut into thin slices
6 garlic cloves, thinly sliced
2 tbsp water
Method:
Set the oven to 275 degrees for preheating.
On both sides of the brisket, brush it with brown sauce.
Place the large skillet over medium-high flame.
Add the vegetable oil and the brushed brisket.
Brown the brisket from both sides nicely, about 5-8 minutes per side
When done nicely, place the brisket on a rack set in a roasting pan
Add water to it beside onion and garlic slices.
Cover the pan tightly with aluminium foil and keep it in the preheated oven.
Roast it for about 6 hours until the meat attains tenderness.
